Boutique vinter who just produces fantastic champagne organically and biodynamically. This might be his best of an outstanding portfolio. No wonder you'll only find this in Michelin-starred restaurants. Even without any added sugar (0 g/l dosage), the ripe apple and honey flavors and aromas come through, along with biscuits and nuts, and a creamy mouthfeel. Lots going on here. What a treat!
